Q: Anyone know of any good baked chicken recipes that uses beer.?
I'm looking for a baked chicken recipe that before you bake it, you insert a can of beer into the chicken's butt. I've always wanted to try it, but can't find a recipe for it.

A: BEER CAN CHICKEN 1 4 lb or larger whole chicken Emeril's Original Essence Seasoning -OR- Mixture of : 1 Tbsp Ground Black Pepper 1 Tbsp Salt 1 Tbsp Ground Oregano 1 tsp Paprika (optional) 2 Tbsp Extra Virgin Olive Oil (any veg oil will do, too) 1 12 oz. can of beer, any brand Remove giblet package from chicken and discard or save for another use. Rub Olive Oil or any other vegetable/cooking oil all over the chicken. Spread Emeril's Original Essence Seasoning (or Spice Mixture) liberally over chicken, and RUB IT IN. Wrap chicken in plastic wrap (or put into a large Ziploc bag) and refrigerate for an hour. FOR GRILLING: Preheat grill to 375°F to 400°F. If your grill has two burners, heat only one. If it has three, heat the two on the outsides and do not turn on the middle burner. Remove plastic wrap from chicken. Open beer can (you may add garlic to the can of beer if you wish) and insert the full beer can into the chicken (so that the chicken is standing upright with the can inserted into it). Stand the chicken upright on the burner of the grill that is NOT lit. The beer can should fit snugly in the chicken so that the chicken does not fall over. Close the grill and cook the chicken for approximately 2 hours or until done. Enjoy! FOR BAKING IN AN OVEN: Preheat Oven to 325F. Make a TENT out of a square piece of aluminum foil and place over the top of the chicken. Bake for 1-1/2 to 2 hours (depending on your oven) or until done. REMOVE the Aluminum Foil Tent from the top of the chicken after 1-hour of baking. Note: The Extra Virgin Olive Oil or Vegetable Oil rubbed on the chicken will keep the chicken moist, and the Spice Mixture Rub will add flavor and a pleasantly-delicious aroma to the chicken. ALSO ... if you want your chicken's skin to be Extra CRISPY, puncture the chicken skin all over with the tip of a knife, to allow the excess fat to ooze out of the skin. This will produce a nice and Extra Crispy Skin.

A: Greek Roast Chicken and Potatoes Chicken pieces and quartered potatoes are baked in water with butter, lemon juice and oregano.Ingredients: • 4 pounds chicken pieces • 10 medium potatoes, peeled and quartered • Juice of 1 lemon (about 3 Tbsp) • Dried oregano • 1/2 cup butter (1 stick) • Salt and pepper Method: Place chicken pieces and potatoes in a 9x13 inch baking dish. Dot with butter. Sprinkle oregano generously over the top. Add 1 1/2 cups water. Season with salt and pepper. Sprinkle lemon juice over all. Baste occasionally while cooking with pan juices. Bake at 350 degrees for 1 hour. Notes: Serve with a Greek salad and some fresh pita bread.

TIred of making the same thing over and over again. Any suggestion to to liven up chicken dinner for picky eaters. That means no spinach, or any other green stuff.

A: No picky eaters at my house! I always gave my kids a choice at dinnertime: eat or don't eat. Also, on the platform of "what they don't know won't hurt them," I was famous for grating or food-processing all manner of veggies and putting them in sauces, meatloaf, etc: celery, green peppers, spinach, zucchini, carrots. . .you may feel this is fundamentally dishonest. It really is incredible how very little a child must eat to grow and remain healthy. How about baking the chicken partway, then covering with tomato sauce (spaghetti sauce from a can or jar is good) and topping with a little mozzarella cheese just before serving? Put some cooked spaghetti or noodles underneath it and you're good to go.

A: Here are some suggestions. Chicken and Mushroom Bake with Rice 6 chicken pieces 1 c. water 1 can cream of mushroom or cream of celery soup (i prefer cream of mushroom) 1/2 c. rice 2 medium carrots, sliced (I sometimes omit) celery salt, for seasoning paprika, for seasoning 1/4 tsp. salt, as needed Place rice in bottom of a baking dish. Pour 1/2 c. water over rice. Add 1/2 can mushroom soup. Stir to mix with rice. Place chicken pieces, salted and peppered, on top of rice mix. Sprinkle with celery salt. Add carrots. Add remaining 1/2 c. water to mushroom soup in can. Stir until well blended. Pour over chicken, carrots and rice. Sprinkle paprika on top, sometimes I add a little parsley (nice pretty effect). Cover tightly with foil. Bake at 325' for 1 hour or until chicken juices run clear. You can also cook this without the rice and carrots. It makes a nice gravy to pour over cooked rice or noodles. This is quick and easy. A family favorite. Saturday Chicken 5 servings 10 chicken pieces (you dont have to use that many chicken pieces. Use how many pieces you want. the rest of the recipe stays the same.) 1 can condensed cream of mushroom (or cream of chicken) 1 cup of cream (dont cheat and use milk; the cream makes a lot of difference) salt, garlic powder, and paprika- to taste chopped parsley Season chicken with salt, garlic, and paprika. Next, spread it out, in one layer baking pan. Dilute the soup with the cream; pour it over the chicken, and sprinkle parsley on top. Bake , uncovered, at 350' for 1 hour or until juices run clear when chicken is pierced with fork. Makes a delicious gravy. Serve with mashed potatoes or buttered noodles or rice. Baked Buttermilk Chicken 1 chicken, cut up 3/4 c. flour 1 1/2 tsp. salt 1/4 tsp. pepper 1 1/2 cups buttermilk 1/4 cup butter, melted 1 can cream of chicken soup Mix flour, salt and pepper. Dip chicken in 1/2 cup buttermilk and roll in flour mixture. Place melted butter in baking pan. Put chicken in pan, skin side down and bake 30 minutes at 425 degrees. Turn and bake 15 minutes. Mix soup and remaining 1 cup of buttermilk and pour over chicken. Bake additional 15 minutes or until golden brown. Makes a delicious gravy. Pecan Chicken 4 boneless, skinless chicken breasts 1/4 cup honey 1/4 cup Dijon mustard 1 cup pecans, finely chopped Place each piece of chicken between 2 sheets of wax paper; flatten to 1/4-inch thickness, using meat mallet or rolling pin. Set aside. Combine honey and mustard; spread on both sides of chicken and dredge chicken in chopped pecans. Arrange chicken in a shallow baking dish, slightly greased. Bake at 350 degrees for 30 minutes or until tender. Serves 4 The original recipe called for mayonnaise but I didnt have any on hand so I substituted ranch dressing. I thought for sure that i ruined it but it was awesome and my family loved it. Classic Herbed Chicken 1- envelope Lipton Recipe Secrets Savory Herb with Garlic Soup Mix 4 Tbsp water 1/3 c. of Ranch Dressing 4-5 boneless chicken breast 1. Preheat oven to 425 degrees, In small bowl, blend Savory Herb with Garlic Soup Mix, ranch dressing and water. 2. In baking pan sprayed with nonstick spray, arrange chicken; pour 1/2 of soup mixture over chicken. 3. Bake uncovered, turning once and pour remaining soup mixture over chicken, 25 minutes or until chicken is no longer pink.

A: take whole chicken breasts...bone in and skin on....place on a baking sheet.....rub some olive oil on them and then sprinkle liberally with salt, pepper and garlic powder....bake in over at 375 till juices run clear...usually about 35-40 minutes depending on the size of the chicken breasts....really delicious

I need a simple recipe for preparing chicken without adding any fat, and steamed broccoli. Basically, baked boneless skinless chicken breast with a side of steamed broccoli which is seasoned? I am trying to eat low-fat, so please keep that in mind. :) Thank you!

A: I would steam the broccoli, that way you don'thave to add calories there, but i would also marinate teh chicken in lowcal or light itallian dressing. If yo uuse krafts light done right it is pretty good tasting and low fat. If you are really worried about the calories I would not use the dressing and put just enough olive oil on the pan to keep the chiicken from sticking and bake.

Q: i am on a diet...i work and go to school....any good low fat baked chicken recipes that i can just...?
save in the fridge and get out and heat when ever i want..cuz i am always on the go and it's hard take time and cook chicken every night. thanks for the help

A: The only other chose you have really is on the grill, or in a toaster oven. I know you said not baked, but if you have the chance Bisquick has a receipe on the back of their box for a "shake and bake" type chicken. . .so good and my daughter loves it too. The only fat is butter on the bottom so it doesn't stick and cooking spray.

I am on the weight watchers diet and I made this - not to high in cals .... and or fat - was very yummy. And I still lost weight that week. I think you bake it at 350 or 400 for like 30 mins. I would like to just keep them together because I don't know how to cut up a chicken, found sites on how to cut up a chicken but too many directions. A: I'd take half a can of beer and stick it inside the chicken, stand it up on your grill, indirect heat, and cook for an hour and a half..it will be like rotissare chicken.

A: I think that sounds delicious. Maybe you could marinate them for about an hour in a mixture of wine and a bit of oil. I would then sprinkle with the Emeril's essence and baked. hey - I mught make that for supper tonight.!

I sprinkle them liberally with lemon-pepper, a dash of salt and garlic powder (more or less depending on your personal preference), and bake them at 325 till they're done (30-40 minutes for boneless cuts).

A: This is one of my favorites, found at Allrecipes.com. I make it several times a month, sometimes changing the ingredients slightly to get a different flavor. My family, including my two young kids, loves it. If you want something quick and easy, you'll appreciate that this only has 5 ingredients. Garlic Chicken 2 teaspoons crushed or minced garlic, or 1/2 teaspoon garlic powder 1/4 cup olive oil 1/2 cup dry bread crumbs 1/2 cup grated Parmesan cheese 4 skinless, boneless chicken breasts Preheat oven to 425 degrees. Warm garlic and olive oil in a shallow dish in the microwave to blend flavors. In a separate shallow dish, combine bread crumbs and Parmesan. Dip the chicken breasts in oil mixture, then in crumb and Parmesan mixture. Place in a shallow, lightly greased baking pan. Bake in the oven for 30-40 minutes, until chicken is no longer pink and juices run clear, and coating is golden brown. Notes: If your chicken breasts are very thick, I suggest you pound them with a meat mallet to flatten them, or cut them into strips to promote quicker cooking. I have used Italian seasoned bread crumbs instead of plain ones, or crushed cracker crumbs instead. You'll find my recipe is slightly different from the one at Allrecipes-I doubled the amount of bread crumbs and Parmesan in the original recipe, because I found that I sometimes ran out or got a sparse coating on the last piece(s) or chicken.
