Q: What are some healthy chicken breast recipes?
I need a quick and easy (that also tastes good) recipe for chicken breast. I am a full time student and dont have much time for elaborate meals. I want something healthier than what I have been eating.
A: GARLIC CHICKEN BREASTS
1/2 c. olive oil
1/4 c. lemon juice
1 1/2 tbsp. oregano
1 1/2 tbsp. chopped garlic (from jar)
1 lb. chicken breasts
Mix oil, lemon juice, oregano and chopped garlic. Pour mixture over chicken breasts. Bake at 375 degrees until chicken is tender. Serve over pasta if desired. Serves 3 to 4.

I'm not going to the grocery store until this coming friday and I wanted to make Stuffed Chicken Breast and Veggies for Dinner. I have a package of Boneless Skinless Chicken Breast, 1 Box of Stove Top Dressing(Cornbread Kind) and some seasoning that's it. Can I make Stuffed Chicken Breast with those ingredients? How do you make Homemade Dressing? What are some good Stuffed Chicken Breast Recipes or Baked Chicken Breast and Salsa w/ Cheese or something like that? I'm on a Diet so I eat a lot of Baked Chicken Breast.
Do I have to have Foil Paper to make Dinner tonight?
A: you can prepare the chicken breast with the seasonings and then on top put some veggies and cheese and roll it and stick it toothpick in it to hold it together and then you can grill it thats good

I just started Weight Watchers diet & bought a bunch of skinless chicken breasts, but havent a clue as to what I can do with them. Any good healthy recipes out there. I'd preferred no frying.
A: Put between 2 pieces of siran wrap & flatten w/a cooking mallot to make the pieces thin. On top of each breast place some fresh mushroom (sliced), some bacon bits, & some cheese..spice it up w/some salsa too or onions. Wrap that up in the breast & close w/toothpicks. Marinate in some fat free Italian dressing for about 30 minutes and then grill till chicken is done. You can put different things in the middle of the chicken if you want. i sort of made this up myself and it turned out really good! i'm actually going to make it this weekend.

I intened to beat the breast out so it is nice and thin and I can fry it really fast as to retain it moisture?

A: Chicken breasts en papillote with broad beans
Serves 2
Preparation time 30 mins to 1 hour
Cooking time 30 mins to 1 hour
Ingredients
For the chicken:
2 large chicken breasts, skinned
4 cloves of garlic, peeled
2 tsps black olive tapenade
sea salt and freshly ground black pepper
few stalks of fresh thyme
2 large pieces of grease proof paper
olive oil for brushing
For the salad:
225g/8oz shelled broad beans
2 small courgettes, washed
55g/2oz stoned black olives
3 tablespoon olive oil
A pinch finely chopped thyme
1 tablespoon sherry vinegar
Method
1. Heat the oven to 200C/400F/Gas 6.
2. Trim any fat away from the chicken breasts.
3. Make a cut in the side of the breast to form a pocket. Place a tsp of tapenade inside each breast. Season with black pepper.
4. Cut 2 large heart shapes from the pieces of grease proof paper or tin foil. Brush with a lick of olive oil and lay 1 breast on one side of each piece of paper.
5. Put 2 cloves of garlic next to each piece of chicken and put the sprigs of thyme on top.
6. Seal the bag by tucking the paper over, all around the outside edge.
7. Place the two parcels on to a baking sheet and cook in the oven for 25 to 30 minutes, the chicken can be tested while still in the grease proof paper bag by touching it carefully to see if it is firm.
8. Meanwhile, for the salad, cook the broad beans in boiling water for 3-4 minutes so that they are still quite firm. Refresh in cold water and drain.
9. Take the washed courgettes and leaving the skin on for colour use a potato peeler and cut thin wide ribbons.
10. Toss the beans and raw courgette together in a large bowl and add the stoned black olives.
11. Mix in the olive oil, the sherry vinegar and the thyme, season with sea salt and freshly ground black pepper and stir carefully.
12. Serve the chicken breast still in its paper bag with the whole cloves of garlic and the salad.

PREPARATION:
Put chicken breasts between sheets of plastic wrap; gently pound to even thickness for even and quick cooking.
Combine marinade ingredients in a plastic food storage bag; add chicken and refrigerate for 1 to 2 hours.
Heat an oiled grill pan, grill rack, or broiler pan. Arrange chicken on hot pan or rack and grill or broil for about 10 to 12 minutes, turning often. Serve with fresh basil leaves or parsley, if desired.

I'm looking for recipes without too many ingredients that I can just throw it all in the pot and come back within an hour and eat it. Doesn't need all the veges, I can steam or do a salad - I make chicken breast a couple times a week and need some new ideas.

A: cut a hole in the side, stuff with you favourite cheese,(I like to use jalapeno soy cheese it I'm trying to be healthy, it melts and is not too spicy). mix plain yogurt with garlic paprika and sage, rub on your seasoned breasts, if the hole you cut doesn't close properly you may use a toothpick to close it so as the cheese doesn't melt out completely. Cook and you can eat it on salad if you'd like with whatever dressing you'd like, it it a well balanced meal if you add some cracked wheat to your salad, yum!

A: Marinade chicken breasts in a mixture of Dijon Mustard and Worchester sauce.
In a plastic bag, add sliced almonds, hickory seasoning, garlic salt and pepper. Put the marinated chicken breasts in the bag and shake until they are covered with the almond mixture. Place in baking pan and pour remaining marinade over the top.
Bake at 350 for about 40 minutes.
Serve with steamed aparagres spears or brocolli and you have a tasty healthy very low fat meal.

Slice your chicken breast into angular chunks, about an inch or so all round, sautee in butter with a good,tangy honey mustard dressing of the lighter creamy variety. Then serve warm over warm rice, or cool salad. Mmmm! Enjoy crusty sourdough, french or hearty potato rolls heated crisp on the side and pass the real butter!

A: BAKED CHICKEN BREASTS
4 chicken breasts
1/4 cup butter, melted
1-2 teaspoon Season-All salt (I use McCormick's)
Preheat oven to 400°F.
Spray a shallow baking dish with non-stick cooking spray.
Place chicken in dish.
Brush the melted butter over the chicken, using all the butter.
Sprinkle with seasoned salt.
Bake for 25-30 minutes or til cooked through.
OVEN-BAKED CREOLE CHICKEN BREASTS
4 boneless-skinless chicken breasts
1 teaspoon Tony's original seasoning
1 tablespoon butter
salt and pepper (optional)
Put chicken breasts in an oven-safe pan, add butter to pan, then top chicken breasts with Tony's on both sides.
You may also want to season with salt and pepper or other seasonings of your choice.
Bake in a 350°F oven for 30 minutes or until chicken is cooked through.

1- I mix egg and some seasoning in a bowl.
2- I put the chicken inside the bowl so it's thoroughly covered with the egg.
3- Then I have crushed crackers and dip the chicken in there and have all the crushed crackers stick with the chicken.
4- I cook it on hot oil until it looks golden brown.

A: Divine and easy!
Use a large non-stick frypan. For 2 people, add small amount olive oil, add breasts, brown on each side. At the same time add thickly sliced mushrooms and onion. While this is cooking, put 2 potatoes, pricked, in their skin, in microwave for 2 to 3 minutes.
Add potatoes to frypan. When all are browned a little, add a splash of soy sauce, lemon juice, cover, simmer for a minute and serve.
